Straight Bourbon Whiskey Finished in Pineau des Charentes and Armagnac CasksCurator’s Notes
As I was crafting the inaugural release of the Dual Cask Series, it was important that the spirit retained its bourbon identity, yet at the same time showcased the sweeter, grape-forward aspects of Pineau des Charentes and the dried fruit and leather attributes of Armagnac. After some trial and error, a combination of two high-rye bourbon recipes moving separately from Pineau casks to Armagnac casks proved the solution. Slow proofing was employed over a seven-month period and the blending reserved for the final weeks with no water added after the casks were emptied. The result is a flavorful whiskey with cask-strength complexity at a comfortable, yet ample proof. Nose: candy apple, salted caramel, chocolate raspberry, fig, hints of balsamic strawberry
Taste: fruit-infused butter toffee, red plum, sweet oak, sugared raisin, spiced rum cake
Finish: moderately long w/ medicinal grape, brown sugar, dried cherry, leather, faint tobacco
